I’m on this never ending quest to feed my family vegetarian meals that they love. If I didn’t love cooking so much, I think I’d be a vegetarian. I just love vegetables, beans, grains, seeds and fruits. I feel better when I don’t eat a lot of meat, and I think it’s easier to be really creative in the kitchen when you don’t use meat. You can cook chicken a hundred different ways, but you’re still eating chicken three days in a row. However, if you make a Black Bean & Quinoa Chili one night, Raw Kale Pesto Pasta the next night and Ratatouille with a Twist with some crusty bread and goat cheese the next, you’re getting a variety of different flavors and textures and not missing the meat AT ALL.
I think the veggie burger has gotten a bad wrap because when people think of it, they think of a rubbery patty that looks like meat and tries its hardest to be meat but is clearly not meat. Ew! I never understood why anyone would want a fake meat burger. If you want it to taste like meat, just eat the meat! If you want a veggie burger, eat one that is delicious and satisfying in a way that is not meat. There are countless ways to make a veggie burger and so many different ingredients to use. You could make one every night for weeks and there would still be new ways that you haven’t tried yet.
I prefer to make mine with beans. I’ve done black bean burgers a lot, but I’m really into white bean burgers right now. I hide shredded zucchini in them, and the kids are getting their protein and their veggies in one tasty bite!
I made this White Bean Veggie Burger recipe twice in the last week because even though I took pictures the first time, I hated them. It was a rush job, and I just knew I could do better. So, that Saturday I made them again. The first time I just served them with regular ole’ lettuce, tomatoes, mayo, mustard, ketchup… normal buns. Bleh. It was alright but there was nothing special about it. I knew that if I put my mind to it, I could make a burger that was wholly fantastic, and I think I did it!
The red pepper aioli is really, truly delicious, and it’s SUPER easy to make. I grilled the red onions so that they were soft and sweet. Avocado is avocado – it makes everything amazing, and then I topped the veggie burger with young pea shoots. If you haven’t had them before, you really need to give them a try. Pea shoots have a unique, fresh flavor and a satisfying, chewy texture that I just love. All together, it’s one good sandwich. My husband said he would go back to a restaurant for this veggie burger. I know he’s my husband and he has to say nice things to me, but I think he was being honest! It’s going on my future menu.
