My dad just had his 70th birthday and my nephew just turned 3, so this weekend my four sisters and their husbands and boyfriend, the six grand kids, my husband and I and my dad are all spending the weekend in San Diego/Temecula to celebrate! The holidays are getting to be quite complicated since everyone has their own little family now, and we don’t always get to spend them together, so we are really starting to take advantage of these momentous occasions where we can also make it a big family vacation. There will be a trip to the Corn Maze/Pumpkin Patch, s’mores and hot dog roasting, apple bobbing and lots of food. We have been coordinating the menu over a shared Google Doc for the last week or so. With a big group like this, you want to go for stress free, easy to make food. Chili bar it is! Waffles and bacon for breakfast and overnight oats are on the menu, as well. I’m really excited about this weekend, and I’m so thankful we can all be together to celebrate my dad and nephew this year.
I’ve actually gotten this post done a couple days ahead of time, because as you read this I will most likely be helping to wrangle a bunch of children as we explore San Diego. Let me know what you think of the recipes I’ve chosen! Are they too complicated or time consuming for you? Do they fit right in with your evening? Either way, I’d love to hear about it.

Note: 1) The recipe for the sauteed greens and mashed sweet potatoes is a recipe for a vegetarian main dish with an egg and parmesan on top. I have omitted these items from the grocery list so you can use the greens and mash as side dishes.
Monday – Honey Dijon Grilled Chicken with Butter & Garlic Green Beans

Note: If you can, get your chicken marinating in the morning before you go to work. It will be incredibly flavorful it you can marinate all day.
Tuesday – Crock Pot Chicken Tikka Masala

Note: 1) This recipe serves six, so you can easily halve it for 2 people, or make the full amount for 4 people, with a little bit for leftovers. Indian food is better next day, trust me. 2) You can find frozen Naan in a lot of grocery stores, or even fresh packaged Naan in the bakery section with all the fresh bread.
Wednesday – Smoked Sausage and Cheesy Orzo

Note: I hate green bell pepper, so I would substitute a red bell pepper. And if you don’t like broccoli, use zucchini or cauliflower instead!
Thursday – Black Bean & Beef Enchilada Casserole

Note: 1) You can substitute red potatoes or regular potatoes in place of sweet potatoes. Really, this roasted veg recipe will work with any vegetables you want – carrots, peppers, onions, broccoli… 2) This recipe uses both fresh garlic and salt, so I would not use the extra garlic salt it calls for. You can if you want, but don’t feel like you need to buy garlic salt when you are already using garlic and salt…
