I’ve been wanting to do something like this for a long time, and I’m so excited to give you guys my first weekly menu plan! I will post a new one every Friday so that you have the weekend to shop for your ingredients. Each meal has its own printable shopping list, so you can pick and choose which recipes you want to cook if you don’t want to do them all.
If you need these recipes adapted to fit your diet in any way (vegan, 21 Day Fix, dairy free…) just let me know and I will help you out! Or if you have any other questions, please just ask away. I am so excited about this and I really want it to work for you.
Since this is the very first post of its kind and I’m still working out the kinks, I’d also appreciate any tips or advice on how to make this menu plan better for you and more user friendly!

*NOTE – All shopping list ingredients will be for serving TWO people, no matter how many the recipe says it serves.
Sunday – Fish Taco Bowls

Note: I would skip the breading on the fish and either pan fry or grill with a grill pan. This would make the recipe easier and healthier. If you do not bread them, just omit the flour and season the fish with the spices.
Tip: Since traditional rice takes 30-45 minutes to cook, get Uncle Ben’s boil a bag rice bags or Trader Joe’s frozen rice for a much quicker rice experience.
Monday – Roasted Sweet Potato Soup with Caprese Grilled Cheese

Note: 1) You’ll need a blender or a hand held immersion blender for this soup but, seriously, just get yourself an immersion blender/hand blender and make your life so much easier. You can thank me later. Any Target or Walmart will have an affordable one.
Tuesday – Chopped Kale Salad with Mediterranean Beef Skewers

Note: 1) If you do not want to grill outdoors, you can cook these skewers on a grill pan on your stove. 2) I would not personally buy a whole bunch of fresh thyme and rosemary just for the 2 teaspoons that the recipe calls for. I would use 1 teaspoon each of dry spices instead.
Wednesday – Baked Ziti

Note: 1) I would serve this with a simple green salad and maybe some garlic bread. 2) One of the steps in this recipe is to put everything in a blender. This is another place you can use your handy-dandy immersion blender instead! Much easier and safer than pouring a hot mixture into a blender.
Thursday – Spinach and Feta Stuffed Chicken with Parsley Potatoes and Steamed Asparagus

Note: If you don’t like feta, use any other cheese that you like. If you don’t have a stove top pan that can go into the oven too, just transfer the chicken breasts to a baking dish after you brown them.
Friday – Pineapple Fried Quinoa
