Taco Tuesday is something I take very seriously. As in, I seriously love that I can serve the same thing for dinner every Tuesday and my family loves it! Well, I mean the same as in I always make tacos, but I do switch up the kind of taco I make. I made these Veggie Tacos Loaded with Guacamole when I was doing Veganuary (Vegan January), and to my complete and utter surprise, my oldest daughter LOVED them.
I have to tell her how many bites of vegetables she has to take every night for dinner, and she does not take one bite more. She very often will fill her mouth with water while she is chewing her veggies so that she doesn’t actually have to taste them.
But these Veggie Tacos were not only a hit – but she has asked for them twice since then! Hallelujah!
You can use any vegetables you like, but my favorite is a mix of red bell pepper, onion, zucchini, yellow squash and mushrooms. For the veggie tacos in the pictures I used only red bell pepper, onion and zucchini because that is what I had, but there’s no wrong mixture! Carrots would be great as would cauliflower or eggplant.
Sear them off in a hot skillet with some oil and then mix in spices and water, cover and let them cook until they are soft – done!
I think the reason my daughter loves these tacos so much even though it’s a constant struggle to get her to eat her vegetables is because I cooked them until they were very soft, and I cut them in long, thin strips that are easy to chew. No big chunks of vegetables here. The point is to make a mixture of flavorful veggies that will stay easily inside the tortilla without falling out.

Ingredients
- 1 red bell pepper cut into thin strips
- 1 small white onion cut into thin strips
- 1-2 zucchinis cut into short thin strips
- 1 package of mushrooms cut into small pieces
- 1 tsp salt
- 1 tsp cumin
- 1 tsp garlic powder
- 1 tsp paprika
- 1 tsp chili powder
- 1/4 cup water
- 2 Tablespoons of cooking oil like olive or coconut
- A bunch of warm corn tortillas

- Shredded cabbage
- Shredded lettuce
- Queso fresco or colby jack
- Sour cream or yogurt
- Salsa
Instructions
- Heat a large skillet to medium/high heat and add 2 tablespoons of olive oil or coconut oil.
- Add all of the cut up veggies and stir to coat in the oil.
- Cook the veggies for 5-7 minutes, stirring only occasionally so that the veggies get a chance to sit still and develop some color.
- Add all of the spices and the water, then stir together.
- Cover the pan and reduce the heat to low.
- Simmer covered for 10 minutes, stirring once or twice.
- Spoon a large portion of veggies into a warm flour tortilla and top with guacamole and shredded cabbage or lettuce. Enjoy!
