I’m pretty obsessed with my Healthy Refried Beans for the Instant Pot, constantly wondering, “How else can I use this delicious creation?!”
So, it was surprising when I realized that I hadn’t used them for tostadas! I love tostadas, but you don’t see them around a lot. I don’t know why, because they are super easy, super yummy and super adaptable. You can put anything on a tostada! Sky’s the limit.
And my healthy refried beans are seriously so delicious and flavorful that they are perfect for vegetarian tostadas, because you don’t need any meat taking the lime light away – they are the star.
I think tostadas are especially suited to vegetarian eating, because you can pile on so many ingredients that you’ll never miss the meat, making it super easy to turn vegetarian tostadas into a complete and satisfying vegetarian meal.
BONUS – leave the cheese off and it’s vegan!
A couple things I want you to keep in mind –
- Both the refried beans and the pickled red onions will take about an hour to make, BUT you can make them ahead of time and just use as needed! Make them on Sunday and use then them for Taco Tuesday, Tostada Thursday and Enchilada Friday! (The beans will keep in the fridge for about a week, and the pickled onions will keep in the fridge for 2-3 weeks.)
- If you are vegan and miss the cheese, you can use a cashew creme cheese sauce or other vegan sauce instead! Here are a few I think you should try:
I know taco bars are a big thing – but why not do a tostada bar? Tostadas are fun to build and the toppings are endless. These vegetarian tostadas would be an excellent party food, and since the refried beans, corn and pickled onions can all be prepared days ahead of time, it would take no time at all to put the bar together the day of the party.
