Here’s what this blog is not: It’s not fancy food for the fine dining lover and it’s also not 5 ingredient, 30 minutes dinners. It’s somewhere in between. I’ve been trying to really hone in on exactly what I do here so that I can give you guys more of what you come here for, and this is where I’m at – Whole food eating (with a few indulgences and treats here and there) for the home cook who enjoys being in the kitchen.
I have quite a few slow cooker recipes and easy to make dishes, and I will continue to do those because no matter who you are you have busy days and need something easy. But the bottom line is that my main motivation when I cook is not for it to be as simple and easy as possible. My main motivation is to cook healthy food with a lot of flavor that I’m going to feel good about eating.
I don’t cook with canned soups, a lot of dairy or processed foods, so the ingredient list is going to be a bit longer than what you might think of as a “simple and easy” recipe, but I promise you, my recipes aren’t difficult! I use a lot of herbs and spices and more than 5 ingredients because that’s how you build healthy flavor. It’s worth it, and it’s not nearly as intimidating as you think. You have my word.
With that being said, this Thyme Zucchini with Parmesan is one of those simple and easy recipes that are the exception. The Parmesan is optional and most of the time I don’t use it, because the flavor of thyme and zucchini together is totally AMAZING. If you haven’t tried that combo before, you definitely need to.
The last two times I made this Thyme Zucchini with Parmesan I served it along side my Healthy Turkey Meatloaf. It’s a simple and easy to prepare meal that is packed full of veggies at every turn, but still delivers on flavor.
