Breakfast. Oh, breakfast. My least favorite meal of the day because nothing good for you at breakfast time really satisfies any of my food cravings. I LOVE going out to breakfast or brunch, but only because I want all of the stuff that is full of fat and calories. I want a breakfast burrito, eggs benedict, chilaquiles, or croissants and other pastries.
I do NOT want a bowl of fruit and some oatmeal. But that is exactly what I eat 90% of the time. It fills me up and I can feel good about myself for the rest of the day. If only there was something else I could eat that would be substantial, satisfy my food cravings AND fill my body with whole foods that are good for me… Enter Sweet Potato Muffins with Chinese Five Spice.
These sweet potato muffins are SO GOOD. First of all, they have roasted sweet potatoes and lightly caramelized bananas in them. Drool. Then they are flavored with Chinese five spice and pumpkin spice. All of this makes the sweet potato muffins moist and substantial with a flavor combo that makes me think of cool weather, coffee, rainy days and sweaters. All of my favorite things! PLUS, they are gluten-free and 100% vegan!
Not only are they absolutely delicious, they are very, very good for you without tasting like it.
What is in Chinese Five Spice?
So, Chinese Five Spice is a blend of, you guessed it, five spices that make up a very warm, earthy flavor that is perfect for savory cooking and sweet baking. Like most things, every Chinese grandma will have her own special recipe, but the one I got from the McCormick Gourmet spice collection contains a very familiar blend of Anise, Star Anise, Cloves, Cinnamon and Ginger.
Other spices you will find in Chinese Five Spice are Sichuan pepper, fennel seeds, cardamom, orange peel, galangal and nutmeg. It just depends on who is making it and where you’re getting it.
You know what? These actually remind me of pumpkin spice muffins, but they are even better because it’s sweet potatoes instead of pumpkin.
Ok, here it goes. I don’t like pumpkin…
Don’t hate me! I bet there’s a totally delicious and acceptable food that you don’t like, so you have to give me a pass on this. I just don’t like the flavor of pumpkin, and that goes for all things pumpkin spice flavored in the fall. So, basically all the foods from September-November.
I am, however, crazy about sweet potatoes, and it’s not just the way they taste. I LOVE that they are a powerhouse whole food that are so incredibly good for you. Why Are Sweet Potatoes Good For You?
» Sweet Potatoes are packed with vitamins our bodies need to stay healthy like Vitamin C (good for your bones, immune system and digestion), Vitamin A (good for your cells and vision), Vitamin B-5 (used to make hormones and to keep cell tissue healthy), and Vitamin B-6 (aids in oxygen development and glucose production which fuels your brain).
» They contain tons of fiber which is important in keeping a healthy digestive system. Keep the skins on! Fiber is there and they’re totally edible.
» Sweet Potatoes have more overall nutritional value than a regular potato, and even though they contain more natural sugars, this type of sugar is natural and good for you so you won’t get a blood sugar spike like you do with artificial sugar.
» Like most Americans, 98% of them according to one survey, you are probably not getting enough potassium in your diet. One medium sweet potato has 542 milligrams of potassium. You might be interested to know that a high potassium diet is linked with a 20% decreased risk of dying from ALL CAUSES. Bring on the sweet potatoes!
It can get pretty expensive to eat whole foods, but sweet potatoes are always plentiful and affordable. It’s a low cost way to do a great thing for your body.
If you need proof that these Sweet Potato Muffins with Chinese Five Spice are amazing, all you need to know is that my picky eater daughter who has been eating waffles for breakfast and honey and PB sandwiches for lunch almost daily for the last three years LOVED them. She ate an entire muffin at once on two different days. That’s a big deal.
