Today when I set out to make dinner, I had everything ready to make this Slow Cooker Basil in Coconut Curry Sauce from The Food Charlatan. While it sounds really fantastic, I just didn’t want to make it when it was time to get everything in the slow cooker. Do you ever feel like that? You have dinner planned out but when it’s time to cook, it just doesn’t sound like it will hit the spot. So, I decided to make up something of my own, and that’s how this Slow Cooker Curried Chicken + Cabbage was born.
I’m calling this a Curried Chicken instead of Chicken Curry because there is just a hint of curry in this dish. It’s not a true curry and not as flavorful as one would be, but it has all the warmth of a traditional curry.
I love cabbage. Love love cabbage. I like it raw in salads, wilted with just little bit of bite and cooked down until it’s super soft. When deciding what I DID want to eat tonight, I remembered that I had a head of cabbage in the fridge I got from a lady at my Bible study. She has a garden that produces too much fresh vegetables and herbs for her and her husband to consume on their own, so she brings the extra to our study group and let’s whoever wants take it. I grabbed this head of cabbage about a week ago and it was still good, but I knew I had to use it up or lose it.
I’m super pleased with the way this Curried Chicken + Cabbage turned out. That it’s a slow cooker recipe makes it all the more sweet. It was not too much spice or flavor for my kids, but it was still super tasty and liked by all the grown ups.
If you wanted to turn this into a soup instead of a sauce, you could just leave out the corn starch. Voila! You have yourself a delicious curried soup. I served this with brown rice and Naan. Everyone loved it, including the kids, so I think it will be part of our regular, easy dinner rotation.
