It’s been very windy and cold here the last couple of days, which I LOVE, so I’ve been making a lot of hot, comforting dinners. This slow cooker beef stew was on the menu earlier this week, and it was the perfect ending to a chilly November day.
Beef stew has to be one of my favorite cold weather meals (who doesn’t love beef stew?!), and since this stew magic works all by itself in the slow cooker, it was perfect to come home to after a couple hours out Christmas shopping with the girls. I am already almost done with all my Christmas shopping! I am not a procrastinator by nature, but especially with Christmas gifts I try to spread out the spending. It helps my money anxiety if the checking account isn’t hit with a ton of withdrawals at once. Christmas shopping for me starts in early November, and I try to be done by the second week of December at the latest.
Tender, fall apart in your mouth chunks of beef, soft and perfectly cooked vegetables, all swimming in a savory gravy. Try it! I do recommend searing the cubes of beef and sauteing the onions before throwing it all in the slow cooker or crock pot, but if you do not want to make the extra effort, then don’t! I rarely make a crock pot recipe that requires extra cooking, and you should do whatever works for you. That’s the kind of cooking I practice and encourage!
