
I’m always trying to eat better, healthier, and cleaner. Eating clean is about eating only unrefined, unprocessed whole foods. No refined sugar or “pantry” foods that have been processed to remain stable over long periods of time. No fast food or alcohol. It’s tough to do when you are not use to it, but I have spent this whole year devoted to being my best physically and to establishing a new normal for my eating habits. So, right now I am doing four weeks of Clean Eating to get back on track since I’ve been indulging WAY more than I want to be.
When I’m trying to cut back on pasta or when I simply want a healthy, easy filler for any dish, I always fall back on roasted spaghetti squash. It’s so simple to make, and you can make a lot of it at once so that you have it for days on hand. I debated whether or not to post this recipe because it is so crazy simple, but those are the best ones, right? You can steam spaghetti squash, but I think roasting it develops the best flavor. And when you are eating healthily, flavor is what matters the most.
It’s, obviously, a perfect pasta replacement, but it’s also delicious in many other ways. This week I had it with a rotisserie chicken and salsa for lunch. Simple and satisfying. Here are some great recipes you can use spaghetti squash in:

Ingredients
- 1 spaghetti squash
- Olive oil
- Salt & Pepper
Instructions
- Preheat oven to 350.
- Cut the spaghetti squash in half and scrape out the seeds.
- Place the spaghetti squash on a foil lined cookie sheet, drizzle with olive oil and sprinkle with salt and pepper.
- Turn the spaghetti squash cut side down on the pan and roast for 50 minutes until the flesh is tender and the skin starts to blister and gains some color.
- Remove the pan from the oven and cover with foil to steam while it cools a bit (about 15 minutes) and then use a fork to pull out the strands of squash.
