Guys, LIFE is seriously in the way. It’s been months since I posted anything, and this new recipe I’m brining you was made and photographed in November! I haven’t photographed anything new since then.
For some reason things have been so crazy that lately I just cannot seem to pull myself together enough make dinner and take pretty pictures of it before I present it to my tired and hungry family. I will try to regroup and get back to you guys, because I seriously have a ton of new recipes to share with you! I did Veganuary, which is being vegan for the whole month of January, so that was a great opportunity to discover and develop some great vegan dinners. And now I’m doing Grain Free February, which I completely made up, but I’m loving it.
Also – BIG NEWS – I’m starting a Personal Chef Service! Part of the reason I’ve been so busy is that I’ve been preparing test menus for my friends and family and doing all the things you need to do to start an honest to goodness business. Filing paperwork, opening accounts, planning, Excel sheets…. It takes a lot of time and effort, of course. I’m so close to being ready, though! I just received my business cards in the mail today, and I’ll be sending in my final paperwork for my DBA on Monday. Exciting!

It looks rustic and a little fancy, because it is both. Easy to pull together for dinner, simple enough to satisfy picky tastes, and delicious enough to serve to guests. It’s the entire package!
No, it’s not entirely whole foods based because I used a store bought pie crust, but I believe in balance as well as in healthy eating, and when you just need to get dinner on the table, I’m going to say it’s ok to serve a store bought pie crust stuffed to the brim with veggies and herbs. Some days survival is the name of the game! Roll with it and give yourself some grace.
If you aren’t a fan of peppers, you could adapt this recipe for any veggie you want. Asparagus, eggplant, zucchini, or yellow squash would all work wonderfully! What vegetable would you try apart from the peppers?? Tell me in the comments!
