If you’re a lover of food and a lover of books, like me, chances are you already know about Peter Mayle. He is the author the The Provence Trilogy, a three part memoir of is time living in Provence.
I have read a lot of Mayle bashing over the years from literary snob types, but all I have to say to that is – haters be hatin’. No, that’s not something I would normally say…
These books are so much fun, so beautifully told, filled with the romance we all imagine the Provence country side to be filled with, and absolutely chock full of descriptions of amazing food! No, it’s not stimulating literature – it’s a memoir. And I loved reading every page of it.
Mayle is very whitty and while some find his story to be just another rich guy bragging about his amazing life, I for one am happy to live vicariously through those who are experiencing what I may never experience but would love to. You won’t be sorry if you give these quick and easy reads a shot. Perfect vacation reading. Solid 4 stars from me for being just oh so enjoyable.
This Paleo Cranberry Chicken for the Instant Pot was inspired by the delicious Cranberry Balsamic Roasted Chicken from Lindsey at Cotter Crunch. Lindsey creates such wonderful recipes, and she’s just the cutest. Head on over to her wonderful website and see what she’s doing over there!
What I really love about this Cranberry Chicken recipe is that it’s pretty much fool proof. Brown the chicken, blend the sauce, and in the end you have tender, pull apart chicken breasts with a really unique and flavorful sauce.
If you aren’t being gluten-free or grain free, this is the PERFECT sauce to sop up with a nice big, crusty piece of French bread. Ya know? Yeah, you know.
If you’re as crazy about cranberries as I am, you’ll definitely want to check out the other cranberry centric recipes I have. Homemade Cranberry Sauce without Processed Sugar is sweet and tart without any bad for you ingredients, and it’s done in 15 minutes! Baked Brie with Cranberry Sauce is an excellent way to use up any leftover sauce, plus your guests will go wild for this two ingredient appetizer. Grain Free Goat Cheese Tarts with Cranberries & Cinnamon are a naturally gluten-free dessert that highlight the best of the holiday flavors.
So, here’s a little secret I’m going to let you in on about this and every other Instant Pot recipe….
You don’t need an Instant Pot to make them! I’m serious. Here’s why: the Instant Pot is just a pressure cooker with a lot of other functions, and the “instant” of the Instant Pot is just the pressure cooker part. Mind blown!
So, with that in mind, I’ve listed a couple other pressure cookers below that you could get for a bit less than an Instant Pot BUT, I will say that I love that you can saute in the IP, so you don’t need to dirty a pan before pressure cooking.
