These books are so much fun, so beautifully told, filled with the romance we all imagine the Provence country side to be filled with, and absolutely chock full of descriptions of amazing food! No, it’s not stimulating literature – it’s a memoir. And I loved reading every page of it.
Mayle is very whitty and while some find his story to be just another rich guy bragging about his amazing life, I for one am happy to live vicariously through those who are experiencing what I may never experience but would love to. You won’t be sorry if you give these quick and easy reads a shot. Perfect vacation reading. Solid 4 stars from me for being just oh so enjoyable.

What I really love about this Cranberry Chicken recipe is that it’s pretty much fool proof. Brown the chicken, blend the sauce, and in the end you have tender, pull apart chicken breasts with a really unique and flavorful sauce.
If you aren’t being gluten-free or grain free, this is the PERFECT sauce to sop up with a nice big, crusty piece of French bread. Ya know? Yeah, you know.

So, here’s a little secret I’m going to let you in on about this and every other Instant Pot recipe….
You don’t need an Instant Pot to make them! I’m serious. Here’s why: the Instant Pot is just a pressure cooker with a lot of other functions, and the “instant” of the Instant Pot is just the pressure cooker part. Mind blown!
So, with that in mind, I’ve listed a couple other pressure cookers below that you could get for a bit less than an Instant Pot BUT, I will say that I love that you can saute in the IP, so you don’t need to dirty a pan before pressure cooking.

Ingredients
- 4 boneless, skinless chicken breasts
- 2 cups fresh cranberries
- Salt & Pepper for seasoning
- 1/2 medium onion cut into chunks
- 2 Tablespoons balsamic vinegar
- 1/3 cup maple syrup
- 5 fresh sage leaves, or 2 tsps dried sage
- 1/2 cup fresh cranberries
- 1 Tablespoon fresh thyme leaves, or 1 tsp dried thyme
- 1 tsp salt
- 1/2 tsp pepper
- 1/4 tsp cinnamon
Instructions
- Set your Instant Pot to the saute function and heat 1 tablespoon of coconut or olive oil.
- While that is heating, season both sides of your chicken with salt and pepper.
- Brown each side of your chicken, 2-3 minutes per side, then press the Cancel button to stop the Saute function on the Instant Pot.
- While the chicken is browning, put all of your sauce ingredients into a high speed blender and blend until smooth.
- Pour the sauce over the chicken breasts in the Instant Pot, stir it around a little to make sure the sauce is all around each of the chicken breasts, and pour the 2 cups of cranberries over the chicken.
- Close the lid, making sure the pressure valve is set to "sealing".
- Press the Manual or Poultry button on your Instant Pot and set the time for 13 minutes on high pressure.
- Your Instant Pot will do a series of beeps the first time to let you know that pressure has been reached and cooking has started, and it will do a second series of beeps to let you know cooking is over. When it beeps the second time, do a manual pressure release by flipping the pressure valve to "venting", but watch out for the steam. This should only take a couple of minutes, and then you can open the lid.
- Serve your Cranberry Chicken immediately along side steamed green beans.
