Part of being a food blogger is recipe development. All of the recipes I share with you guys are my own (except for the ones that are part of my Food Blogger Recipe Swap group), but the inspiration has to come from somewhere, right?
Whether it is a great meal I had in a restaurant or a dish my mom use to make when I was a kid, there is food I ate at sometime, somewhere that inspires every one of the recipes I create to share with you. It’s the same for all food bloggers, cooks, and professional chefs everywhere.
This dish of Pesto Chicken with Veggies, for example, is not incredibly original. If you search “pesto chicken” on Pinterest, you are going to get hundreds, if not thousands, of recipes in your results that center around pesto chicken, but it’s the combination of ingredients and flavors, and the way you cook it that makes a recipe your own.
I was inspired to make this One Pan Pesto Chicken + Veggies by a recipe video I saw on Facebook. It was something like Four Meal Prep Recipes and had four different ideas of make ahead lunches you could pack up and take with you to work. One of them used chicken thighs, green beans, tomatoes and pesto.
I just knew that it was something my husband would love, so I made it for him to take to work that next week. It was, predictably, a hit, and I decided that I would alter it a bit to fit my personal tastes by using chicken breasts because I don’t like chicken thighs and they are healthier, switching up the vegetables and making my own pesto instead of using the store bought Trader Joe’s version that I made it with the first time.
This dish is incredibly healthy even with the pesto. There’s only 1/2 cup of shredded Parmesan in the whole pesto recipe, and you only use 1/2 of the pesto in this entire dish. Other than that, you’ve got chicken, veggies, herbs, nuts and a little oil. I served it with quinoa to add a healthy seed with it, and it was the perfect nutritious, delicious dinner.
Do you believe this whole meal is ready in 30 minutes? It is! You could even make the pesto ahead of time and store it in the fridge for up to 5 days, and then you would make your dinner prep even simpler.
I made a classic basil pesto to go in this dish, but you could use any kind of pesto you like. But if you’re not using pine nuts then it’s a pistou. Pee-stew is how you say it. I discussed the difference between a pesto and a pistou in my Raw Kale Pesto Pasta post, so go over and check it out!
