Hummus Chicken with Veggies + Feta is an entire meal in one pan. Everything goes into the oven in the same dish and comes out perfectly cooked with a ton of delicious flavor. It doesn’t get any easier than this!
First off, I’d like to say that I am aware this is my second recipe including my White Bean Hummus with Artichokes, but I’m a little obsessed with it. It’s REALLY good, you guys. I definitely think you should give it a shot, because you will love it.
I think I’ve mentioned before (read: at length here) that ease of preparation and hands off time are not my main motivators in the kitchen. I actually love being in the kitchen 90% of the time. I want to chop, I want to babysit a pan while the skin crisps up perfectly, and I want to taste and adjust as I go until it reaches the flavors I’m aiming for. However, I don’t ALWAYS want to do that.
Sometimes dinner has to happen even when it’s the last thing you want to do. It has to happen when you are busy all day and aren’t getting home until it is suppose to be on the table. For those days, this is the perfect meal.
This One Pan Hummus Chicken is a great prep ahead meal. Put it together the night before or the morning of, cover with plastic wrap and keep it in the fridge until you need it. Your husband or your kids could put it in the oven at the right time if you won’t be home. There’s literally nothing else to do.
And since it makes four perfect portions, you could make it on a Sunday, separate it into containers and take it to work with you for lunch.
I just love the way the feta gets all toasty and chewy sitting right on top. The hummus stays creamy but bakes up with a nice crust on top, and the chicken stays moist. You could serve this over rice or with some bread, but I say keep it low carb where you can. This is a filling meal on its own since you are getting protein in a few different areas.
If you want to add extra veggies, do it. If you want to switch out these veggies for others, do it! Make it yours. That’s the best part about cooking. You can do it however you want. YOUR taste buds are correct! Always!
I used my White Bean Hummus with Artichokes for this One Pan Hummus Chicken, but you can use any store bought hummus you like.
