These Naan Bread Toasts with Hummus, fresh tomato and cucumber and crumbled goat cheese are a healthy and easy lunch or a great appetizer at your next party. Healthy, delicious and easy, what more could you want?
In my opinion, you cannot have too many different ways to eat Naan bread. There is nothing else quite like the pillowy softness, chewy texture and delicious flavor. When people try to pass off pita bread or another flat bread as Naan bread, I just nod and smile and think, “Now I question everything you say.”
There is an Indian restaurant close to where we live that my husband and I eat at once or twice month. So, 90% of the time we eat out, it’s there. Everything I’ve had there is delicious, including their Naan. You know how when you find something you like at a restaurant you just get it every time? I can’t do that there because everything I get is so delicious that I’m afraid on missing out on their other amazing dishes if I only get one thing! It’s called Anarbagh and is on Ventura between Fallbrook and Shoup in Woodland Hills. If you live in the area, you must try it. They aren’t paying me for this, btw, I just seriously love that place.
Back to this Naan Bread with Hummus + Goat Cheese, I just have to say that it was even better than I was expecting it to be. I used my White Bean Hummus with Artichokes, but you can use a store bought hummus or another homemade hummus that you like.
After toasting the Naan in the oven for 15 minutes, it takes another 2 minutes to top it with the hummus, cucumber, tomato and goat cheese. Sprinkle some pepper over the top at the end, and you have a delicious and healthy lunch or simple yet impressive appetizer.
I’m sure I’ll be making this again soon, but I’d love more easy lunch ideas. What is your favorite healthy and easy lunch? Tell me in the comments!
