If you’re a regular reader, you know that I’ve been leaning heavily on the slow cooker/crock pot. We always called it a crock pot growing up. Anyway, I have found that one of my favorite things to make in the crock pot is pulled pork sandwiches. Like my Crock Pot Pulled Pork with Homemade BBQ Sauce. It’s just too darn easy and delicious not to repeat over and over again. Everyone knows that if you’re going to have a pulled pork sandwich, you MUST have a killer coleslaw to go along with it. My friends, I give you that coleslaw.
I’m not a big fan of the chopped, heavily dressed deli coleslaw that you probably think of when you think of coleslaw. You know, the one that looks like cabbage/carrot confetti and is doused in mayo? No thank you.
My perfect coleslaw has to be heartier. I want it able to stand up to the delicious dressing without wilting or getting drowned, and I discovered that kale and broccoli make the perfect choice for a coleslaw that is still fresh and crisp the next day. These ingredients are hearty and while they do soften up and marinate while they sit, they don’t wilt and get soggy.
Topped with sunflower seeds or pepitas for a little crunch, it’s the perfect accompaniment to any sandwich! Do you have a favorite coleslaw recipe? Share it with me in the comments!
