First off, let me share with you a little bit of information I just discovered as I was searching the interwebs. It’s St. PADDY’S Day, not St. PATTY’S Day. Did you know that? Apparently, Patty is the shortened form of Patricia, not Patrick, and since it’s formally known as St. Patrick’s Day, Paddy it is. There you go.
In our house, we always celebrate taco Tuesday. Not only are tacos good any time, which means everybody is always in the mood for them, but it’s an easy weeknight dinner that I don’t have to put much thought into. I switch up the protein from week to week, but we basically have the same dinner every Tuesday, and it’s a hit.
Since tacos (and, honestly, burritos) are always on my mind, I thought that it would be really fun to try to create an Irish Taco for St. Paddy’s Day. Guinness was a no-brainer and while beef might have been the obvious choice, I went for pork because I really love pork tacos.
The green crema is a lime and cilantro sour cream. The bright, fresh flavors of lime and cilantro really made the deep flavors of the Guinness braised pork sing. I happen to be one of those people who loves sour cream and while I hardly ever use it or even let myself have it, I thought these Irish Tacos would be the perfect time to add a doctored up sour cream sauce. And it was!
Also, I don’t know if you’ve had queso fresco recently, but I had not had it in forever and I forgot just how darn good it is! Feta is my favorite cheese, but I think it is second on my list right now. Queso fresco is currently King on my cheese list, and these Irish Tacos are right up there on my taco Tuesday list, too. I use the Martha Stewart dutch oven for all my stove-to-oven needs. It’s a great one if you can’t be spending Le Creuset kind of money. However, if you do want a really fantastic Le Creuset dutch oven, I have this one below that I received from my mom for my wedding. It’s in storage right now, which is why I’m using the other one, but it doesn’t hurt to have a couple of these things 😉
