Can you believe that school is back in session already? If it hasn’t started quite yet where you live, then it’s just around the corner.
My oldest starts kindergarten next week. KINDERGARTEN. I can’t believe we are already at this stage. She was just a baby five minutes ago.
But she is so excited, and even though I’m starting to get sad thinking about how much time she will be spending away from me (don’t cry, don’t cry), I know that she’s going to love it. My Boo, as I call her, is so fun and social, and she LOVES to learn new things. I’m just praying her experience in school is everything we hope it will be.
So, while we prepare for school by going to orientation, getting her classroom assignment, looking at the after school programs and stocking up on the supplies she will need, my mind is also on food, naturally, and what the girls will be eating for breakfast on hurried school mornings.
These Healthy Whole Wheat Banana Carrot Muffins are the perfect thing.
My youngest daughter wanted to bake with me the other day, so I suggested muffins.
“What kind of muffins do you want to make?” I asked her.
“ORANGE muffins!” she proclaimed.
“Wa ha ha,” I thought, “It’s almost too easy. Carrots are orange, so healthy carrot muffins you will get.”
“That’s a great idea!” I said out loud. “I have a really good idea…”
My little one is actually a really adventurous eater. She will try anything and regularly steals my salads at lunch time, so she didn’t balk at all when she saw that we were putting carrots into the muffins.
She did, however, insist on sprinkling half of them with chocolate chips before they went in the oven, and these Healthy Whole Wheat Banana Carrot Muffins are so good for you that I happily let her.
Don’t let the health aspect of these Whole Wheat Banana Carrot Muffins scare you away. They are really good! Moist and just the right amount of sweetness with great flavor that is reminiscent of banana bread, they feel like a treat but are good enough for you that you can make them ahead of time and have them for breakfast or an afternoon snack every day.
