My family and I just got back from a week on the beach for our summer vacation. I married into a truly excellent family and one of the MANY perks to being one of them is that my in-laws take us on a beach vacation every summer.
We only go about 45 minutes north of where we live, but everything is different. The weather is better, and by that I mean COOLER, and the scenery is…well, it’s a beach! Everyone loves being on the beach. Actually, I don’t love the ocean itself. The sea scares me. You have to respect the sea! (If you get that reference, you are one of my people.)
I’d choose mountains over ocean if I had to pick, and even though I don’t want to be ON the ocean, I can still revel in the luxury that is beach life. Ocean waves lulling you to sleep, the sea breeze dancing through every room, sunsets that rival those I grew up seeing in the Arizona desert. It was a great week.
But now I’m back home, and I’m glad to have my bed and my shower and the nighttime sound of my standing fan back. Does anyone else need a fan on at night, even in the winter? It’s my white noise.
I’m also looking forward to getting back to eating well! No lies here – I ate horribly. Chips, ice cream, pizza, cookies…and a lot of wine. Wine is my real weakness and when I’m on vacation, all bets are off.
So, I need a jump start back into healthy living.
For the next week, maybe two, I will be eating a strict diet of vegetables, fruit and beans. I was just going to do vegetables and fruit, but I really enjoy beans, so I threw those in there too.
When I get back to a more balanced way of eating, I will definitely be making this healthy Greek yogurt dip to snack on in the afternoon with my carrots sticks and slices of cucumber.
I took this healthy Greek yogurt dip to my book club a couple months ago, and everyone liked it. I’ve made it again since then just for me, and it was delicious as an afternoon snack.
Give it a try and let me know what you think! It’s creamy and a little tangy from the apple cider vinegar, but there’s a hint of sweet from the honey that works so well against the fresh green-ness of the parsley and scallions.

Ingredients
- 2 cups Greek yogurt
- 1 Tablespoon fresh parsley, finely chopped
- 2 scallions thinly sliced, green and light green parts only
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/2 Tablespoon honey
- 1/2 Tablespoon apple cider vinegar
- 1/4 tsp salt
- Pinch of pepper
Instructions
- Mix all of the ingredients together very well.
- Refrigerate for 30 minutes at least to chill and let the flavors meld together.
- Serve with raw vegetables of your choice.
- Keep covered in the fridge for up to three days.
