Healthy Apple Crisp with Apricots was my way of using up all the apples we had that were about to go bad. This recipe would work with any variety of apple, or any stone fruit you have on hand!

Making Healthy Apple Crisp with Apricots
Step 1 - Prepare the apples
I used 6 medium sized apples, but if you have smaller ones you could use 8 or even 10. Any variety works with this delicious healthy apple crisp recipe, but you may want to choose a variety that is sweeter to start with.
Step 2 - Prepare the apricots
The apricots I got were probably not really ready to be picked, because they were still a bit hard and sour. That’s why I decided to add them - so that the sweetness of the crumble would balance out the sourness of these apricots. But seeing as how apricots have natural sour notes, this recipe would work with any apricots you have.
Step 3 - Finish the filling
After you put the sliced fruit into a mixing bowl, add the lemon juice, orange juice, maple syrup and corn starch. Stir together until completely coated, and then pour the filling in your baking dish.
I used a stone pie plate that was my mom’s, but you can use any pie plate or square baking dish you have on hand.
Step 4 - Make the crumble
- Put the rolled oats into a mixing bowl
- Add the coconut sugar and hemp hearts
- Add your spices and a pinch of salt
- Soften your coconut oil and throw that in
- Pour in the maple syrup
Then use a spoon to mix everything together. It will be sticky and would easily form a ball if you tried to make one with your hands.
Step 5 - Add the crumble to the top
Use your clean hands to scatter chunks of the crumble all over the top of the fruit already in the baking dish. Make sure you leave the crumble in nice chunks because those will cook and crisp together for that wonderful chunky granola topping everyone loves so much.
After that you can cover it with foil and leave in the fridge to bake later, or you can bake immediately at 350 degrees for 45 minutes - 1 hour. When done the juices will be a bubbling, delicious syrup and the crumble will be toasted, crunchy and brown.
This Healthy Apple Crisp with Apricots is dairy-free, but I’m a tiny bit obsessed with freshly whipped cream at the moment, so I put a big dollop of that on mine! You could use whipped coconut cream if you want to keep the dairy free thing going, though.

Ingredients
- 6 apples
- 4 apricots
- 1/4 cup lemon juice
- 1/4 cup orange juice
- 1/4 cup maple syrup
- 2 Tablespoons corn starch
- 2 cups rolled oats
- 1/4 cup coconut sugar
- 1/4 cup hemp hearts
- 1tsp cinnamon
- pinch of salt
- 1/4 tsp ground ginger
- 1/2 cup softened but not melted coconut oil
- 1/2 cup maple syrup
Instructions
- Preheat your oven to 350 if baking immediately.
- Peel the apples, slice the min half, core, and slice into 1/4 in thick pieces.
- Cut the apricots in half, take out the pit, and cut into 1/4 thick pieces.
- Put all of the sliced fruit into a mixing bowl and add the lemon juice, orange juice, maple syrup, and corn starch.
- Pour the contents of the mixing bowl, with all the juices, into a baking dish or pie plate. Set aside.
- In another bowl, combine all of the crumble ingredients and mix until well combined.
- Use your clean hands to sprinkle the crumble topping all over the top of the fruit in the baking dish. Make sure to leave some chunks of the crumble because they will bake up nice and crisp and be the best part!
- At this point you can cover with foil and keep in fridge until you are ready to bake.
- When ready, bake at 350 degrees for 45 minutes - 1 hour, until the juices are bubbling and the top is nice and brown.
- Serve immediately with freshly whipped cream or whipped coconut cream.
