Grilled Peaches with Mascarpone, Honey + Cinnamon Granola are the ultimate summer dessert. Super simple but impressive enough to serve your guests! Grill the peaches up with the rest of your meal and add toppings before sitting down to dinner for a no fuss, all flavor summer dessert that’s ready to eat when you are.
With school out and summer in full swing, I think it’s safe to say that even the very food oriented ones out there, like myself, are looking for shortcuts when it comes to dinner and dessert.
No one wants to be stuck in a hot kitchen all evening, right? So when you’re outside at the grill this summer, why not toss a few halved peaches on there and get your dessert done at the same time? It’s too easy, and too DELICIOUS not to.
My favorite part about these Grilled Peaches with Mascarpone, Honey + Granola is that you can go super simple with store bought granola, and then the entire dessert is just made on the grill. Nothing to stir, combine or make beforehand. How easy is that?!
OR you can put a fancy little edge on it and whip up a small batch of your own homemade cinnamon granola, which is what I did. That part can also be done ahead of time so that when you’re ready to put everything together, it’s already done, which takes me back to my first point – THIS DESSERT IS SO EASY.
I don’t normally like to push the “it’s so easy!” angle because I’m not personally interested in making food that is really, super duper idiot proof. I enjoy being in the kitchen and I like my recipes to reflect that. HOWEVER. Summer is not the time to be slaving away in the kitchen when you could be spending those late daylight hours playing board games or going for a before bed swim with your kids.
AM I RIGHT?
I thought you’d agree.
Besides being easy, Grilled Peaches for dessert are awesome when it’s hot because it’s such a light dessert that you don’t feel gross and weighed down when you’re done.
It’s a fresh little bite of sweetness that hits all the right spots without being too much at the end of a meal.
I served these after a dinner of ribs, Mexican street corn and grilled asparagus, and everyone was still raving about these grilled peaches and how perfect they were to end the evening with. Because even though the meal was indulgent, the dessert was not so indulgent that anyone felt guilty about partaking. And that’s what you want in the summer!
See that heavenly mascarpone melt off the side of that lovely grilled peach? That was just a dollop of cold mascarpone straight out of the fridge onto a hot peach straight off the grill, drizzled with honey and sprinkled with cinnamon granola. Then I let it sit while we enjoyed dinner and by the time we were ready for dessert, the mascarpone had been slightly melted and mingled with the honey to make a luscious, creamy partner for the sweet, slightly smoky and soft peach. The added crunch of the granola is the last note it needed to be summer’s ultimate dessert.
You can bet I’ll be serving these babies all summer long.
