It’s the very last day of 2018. What a crazy year! Actually, the craziest part for me has taken place in the last two months.
Toward the beginning of November my husband and I decided that we wanted to move away from Los Angeles and to the Oklahoma City area to be near my sister and her family. She has three boys around the ages of my two girls, so the thought of raising them near each other was too good to pass up. Not to mention I would get to live near my sister again and really get to know my brother-in-law!
So, right before Christmas we took our cars, two girls and dog Piper on a one way 20 hour drive with our cars packed to the brim with the things we didn’t put in the moving truck.
We had a great Christmas in my sisters beautiful home, and then on the 28th we closed on the house literally right next door to them! Our yards share a fence. I’m beyond excited.
We have been waiting and praying for a long time, and now God is finally sending us on a new adventure. All things in His timing, right?! And what a good thing He has given us.
Well, we are still in the process of cleaning the house, doing a little bit of painting here and there, and buying necessities. Plus, we are still waiting on the moving truck with all of our things, which should be here by the end of this week.
In the meantime, my sister and brother-in-law have graciously allowed us to stay with them. While wonderful, I miss the freedom to cook what I want when I want! I’m so looking forward to finally getting into our house and having my very own kitchen to cook in! It’s beautiful, you guys. WHAT IS GREMOLATA?
Gremolata is traditionally a raw parsley, garlic and lemon relish served with meat or fish meant to bring a bright freshness to a dish.
I LOVE parsley. It has the reputation of being a throw away herb, and I blame the culinary fad back in the day where every single dish you ordered in a restaurant was garnished with this pointless sprig of fresh parsley. It was wilten and unappetizing looking, and now everyone hates parsley!
Let’s get back on the parsley train by using it in DELICIOUS and APPROPRIATE ways, e.g. my amped up version of gremolata with additions of pistachio and orange.

There are a few tools in the kitchen that make this recipe a lot easier. I LOVE my zester and use it all the time. It’s not only great for zesting a citrus fruit, but I like to use it on garlic cloves when I don’t feel like chopping, too. And a high powered blender like the Vitamix is an invaluable kitchen tool. In my experience, other “high powered” blenders just don’t get soups and sauces as smooth and creamy as the Vitamix.
