A tuna salad sandwich has always been a favorite of mine. Even when I went through my pretty strict “no mayo” phase, I would still bend the rule every now and then for a good tuna melt.
Now, as a busy mom of two with a lot going on, it’s one of my favorite quick lunches to throw together. Whether it’s something super simple like my Tuna Salad Baby Bell Pepper Boats or my mayo free Olive Oil Tuna Salad with Sun Dried Tomatoes + Almonds, a delicious and satisfying lunch is only 5 minutes away as long as I have a can of tuna in my pantry.
This recipe, like a lot of others, was created by accident. I like to make Freshest Pico De Gallo for Taco Tuesdays, and there is always some left over. I make a lot on purpose 🙂
Normally I’ll put the leftover pico in a salad for lunch, but I really wanted tuna, so I decided to mix the pico in with it. I wasn’t expecting much, and I honestly didn’t even really want to, but I can’t stand when leftovers go to waste, so I was trying to use stuff in the fridge up.
It was SO good, guys! The flavor of the super fresh salsa along with the creamy mayo and tuna was awesome. I ate it up with crackers, and it was the perfect lunch. I was full, but not too full, and I felt good about what I just ate because of all the fresh vegetables.
If you are not a mayo fan, you can use veganaise or yogurt. Yogurt would actually be super good with this! Probably even better than mayo. If you try yogurt, let me know what you think!
