Cloud bread. What is this cloud bread, you ask? Well, I’ve been meaning to take a go at it for a while, but it always fell to the back of my mind when planning my meals for the week. I originally had very different plans for this ground beef, but when it got close to thinking about starting dinner, I just did NOT want to make what I was going to make. So, I changed it up.
“I could eat a burger,” I thought. Okay, but I didn’t have any buns or anything else I could use as a cheeseburger bun. Then it hit me. Cloud bread! I could make cloud bread and use them as buns so that I wouldn’t feel guilty eating a cheeseburger. Huzzah!
Cloud bread is “bread” made from mainly eggs and either cream cheese or cottage cheese. You whip the whites of the eggs until they form stiff peaks then fold the rest of the ingredients in, place them on a baking sheet in the shape and size you want, and bake for 30 minutes. Tada! You have a no carb bread substitute.
They worked surprisingly well even though they are a little flimsy and very light in texture. If you are expecting a firm texture and a chewy crust, this is not going to do it for you. However, if you want something that can pretend it is bread and not weigh you down after you eat it, this is for you.
I was getting a little nostalgic for summer food, so these Cloud Bread Cheeseburgers hit the spot. I turned mine into a BBQ Cheeseburger with some Dijon mustard and BBQ sauce. My craving was satisfied and I did not feel overly full or heavy afterward. I just love food like that!
This is the type of recipe I always aim to create. You can eat healthily and still eat the things you love. You just need to take a little more time in the kitchen than you probably have been and make your ingredients work for you. You can do it! Eat well AND feel good. You deserve it.
