Let me be clear – I would not call these just chocolate chip oatmeal cookies. These are chocolate chip cookies WITH oatmeal and coconut. The oatmeal and coconut are highlights, but the main event here is the chocolate. They started off as chocolate chip oatmeal cookies, but I failed to make sure I had enough oatmeal before starting them, and all I had was 1/4 cup. So, that’s what went in. And you know what? I liked it. I liked it enough to share with all of you. There is a hint of chewiness, just an edge of the oatmeal flavor, and I enjoy that teasing dynamic.
I made these for a get together where I was supposed to bring snacks, but it got cancelled at the last minute (your loss, LG peeps! 😉 ) so I’ve eaten more of these than I should. Because they are really good. They are chewy and just a little crumbly. They are a little salty and a lot sweet. The coconut flavor is not overwhelming and the shreds of coconut help with that chewy texture. These cookies are a win. And I’m not a great baker, so I consider this a double win.
One of the great things about this recipe is that you don’t need to chill the cookie dough! I’ll be honest – when I’m looking on Pinterest for a cookie recipe, I skip the ones that tell me to chill the dough before baking. Who has the time or patience for that? Not me. I inevitably skip that part and them my cookies end up too thin and crisp because they got too soft and spread too much. These cookies turned out perfectly without spreading too much when the dough was put in the oven from room temperature. Even when I put the dough on a hot cookie sheet that I already had put in the oven with previous cookies, they still held their shape nicely.
My pictures have taken a dive in quality. I apologize, but I’ve been taking them with my phone because these last two recipes were not intended to be for the blog. I took almost two years off and recently regained the creative brain space to start thinking about this blog again, but the planning still hasn’t caught up with the desire. So, I quickly snapped some shots of these cookies and did my best with them in editing.
