CHICKEN TACO BAKED SWEET POTATOES
Before we talk about these amazing chicken taco baked sweet potatoes, I need some help. Lately, I have been setting my alarm for 5:30am every day. I have so much going on, so much I want to accomplish in a day, that I know I need to wake up earlier than the girls if I want to get it all done. That knowledge, however, is not always enough to get me out of bed that early. In fact, it maybe works two days a week. I am ALWAYS happy that I got up as early as I did and with how much I accomplished before the day even started, and I’m more pleasant to the girls first thing when they wake up since I didn’t just roll out of bed and I’ve already had a cup of coffee (or two), but it’s sooo hard to get up that early. Especially now that it’s not light out until 7am. What’s a mom to do?
I’m furiously typing this to hopefully get this post done today while my little one eats her breakfast and knowing that the big one will be up any minute now. Maybe the memory of having to rush on this post will be enough to get me up early tomorrow. We’ll see.
I mentioned in the last post that my go-to Guacamole and the Freshest Pico de Gallo (← CLICK for the recipes!) you will ever have are always on the table for Taco Tuesday, so I automatically included them in these chicken taco baked sweet potatoes.
I almost don’t ever need another regular taco ever again after having these. Seriously, the sweet, creamy sweet potato with the spiced up slow cooker chicken and crunchy pico de gallo were the perfect combination. I added some seasoned pinto beans for a taco salad feel. Guacamole and cheese make literally anything more delicious. Guys, these chicken taco baked sweet potatoes are one of my new favorite meals!
Omit the chicken, add extra beans and pico, and you have yourself a killer vegetarian entree! Don’t use cheese and it’s vegan! This dish is so versatile. It would really make a great taco bar for a party. You can easily bake a mass amount of sweet potatoes and all the other elements can be doubled, tripled, etc. to make as much as you need. That party idea just occurred to me, and I think I will actually do it for a large get together.
