I recently challenged myself to a week of homemade breads. I made a new bread from scratch every day for seven days. So, as you can imagine, we had a lot of bread lying around.
With the leftover Brioche, I knew I wanted to do something delicious and easy that I could share with you guys. Brioche is a very rich and heavy bread. It has a lot of butter and eggs in it – it’s almost like a cake, but not sweet and not as crumbly.
My newest obsession is raw almond butter. I get THIS ONE from Trader Joe’s. So, I slathered a piece of Brioche toast with a bunch of it, layered on sliced, sweet, bright red strawberries, drizzled honey over it and had a breakfast to remember.

After taking the pictures I had the idea to sprinkle the top with Raw Shelled Hemp Seeds, which I LOVE and put on pretty much everything. They are a powerhouse of goodness. There’s more protein and omegas, and less carbs, in the same serving of Hemp Seeds than there is Chia seeds or Flax seeds. It’s especially good on oatmeal because of the nutty flavor. This kind from Manitoba Harvest is really good.
I made a couple slices of this for my husband who loved it too. This Brioche Toast is really the people pleaser of toasts. You’ll be hard pressed to find someone who doesn’t like this for breakfast. Or any time of day! It makes a great snack, too.

Ingredients
- Leftover Brioche slices, toasted
- Nut butter of choice
- Fresh strawberries, sliced
- Honey
- Raw Shelled Hemp Seeds
- Chia Seeds
- Chocolate Chips
- Chopped Nuts
Instructions
- Toast your slices of leftover Brioche.
- While still warm, spread your nut butter over the top, layer on the sliced strawberries, and drizzle with honey.
- Sprinkle any toppings you are using over the top, and enjoy!
