Creating Something Special For Someone You Care About
My daughter is friends with two little girls, twins, who don’t eat any dairy. We met them through a family oriented community group at our church, and since then I have become good friends with their mom. So, we see them a lot for not only play dates but social occasions where there is food involved.
More than once I have seen these two girls not be able to eat any dessert that is available, because whether it is butter, milk or chocolate, dessert usually has some form of dairy in it. I am continually impressed when they say, “That’s okay!” and continue on merrily, understanding that they have a special diet that is not always met in social situations.
If I know ahead of time that we will be seeing them, I will make my Dairy Free Coconut Rice Krispie Treats, and I love seeing how excited the girls get when they find out the rice krispie treats are there. So, I thought I would create a special dessert with them in mind and my daughter and I would bring it over, just to let them know they are special and loved.
I knew I wanted to make a fruit bar with almond flour from Bob’s Red Mill, and since they both love strawberries, that made the decision easy.
Bob’s Red Mill almond flour is perfect for gluten free baking. The texture is light and fine, and bakes up perfectly. And I love using their products because they believe that baking for others is one of the best ways to let them know you care, which I totally agree with. You are putting your time and some of yourself into every single thing you make for another person, and that comes across clearly.
These Almond Flour Strawberry Bars are completely gluten-free, dairy free and processed sugar free. It’s a little chewy and a little sweet, but there is a nice compliment to the sweet strawberries with a little bit of lime zest and juice that is mixed in. Chia seeds give the strawberry filling a thick, jam like consistency that is really lovely.
I love making something special for someone special in my life. Doesn’t giving make you feel good? There’s something about knowing you did a nice thing for someone, something that makes that person in your life feel special, that just makes you feel good, isn’t there? It’s not surprising.
