I love my bad carbs. I can go for a while without eating bread or tortillas or pasta, but I always reach a point where my mouth feels like it just NEEDS to chew something that is an actual bread-y carb. You know what I mean?
There are very few carb substitutes that actually make you feel like you just ate something you didn’t. Cauliflower crusts are great! But they aren’t tricking your mouth into thinking you just had legit pizza. Cloud bread is perfect for a sandwich substitute, or like when I made these Cloud Bread Cheeseburgers. But no one is going to eat cloud bread and then say they no longer have a desire to sink their teeth into some chewy on the inside crunchy on the outside sourdough.
I believe that eating well is something you have to choose to do on a daily basis. You’re always going to want the bad stuff, and there are no magical recipes that taste like they were made with butter and cheese when they weren’t. You are always going to want the butter and the cheese, but you have to choose to either be done with those elements, or eat them in moderation and with restraint.
Success is a choice, and your diet and health are no exception.
HOWEVER – almond crusted chicken is the PERFECT, TRICKY substitute for breadcrumb crusted chicken! The texture is the same, the crunch is the same, and the experience of eating it is the same!
I’ve said many times that if you are going to eat a whole food healthy substitute for something you need to acknowledge that you are trying to be healthy or you will always go back to your old way of eating. And I believe that is true 99% of the time. But with Almond Crusted Chicken with Mango Relish, you are absolutely not sacrificing any flavor, any texture, or any of the experience of traditional breadcrumb crusted chicken. I promise!
Sorry for the poor quality of the pictures above, but I wanted you to see my little station set up for breading the chicken. Beaten eggs in one pan, seasoned almond meal in the other, straight into a hot pan with melted coconut oil. So easy and very little mess!
I find that round cake pans are perfect for this kind of breading process whether it is chicken, fish or french toast. Try it!
The chicken stays nice and juicy, the crust turns golden brown and is super crunchy, and the mango relish on top is the perfect compliment. It’s sweet but there is also a nice vinegar element that brightens up the chicken perfectly.
On the side of this I served roasted rainbow carrots and a massaged kale salad with lemon and parmesan (because you have to have a LITTLE cheese SOMETIMES). The entire meal was healthy, delicious and whole food heavy. Really, it’s my favorite way to eat.
Indulgence has a place, but I am at the point where I crave healthy meals because they make me physically feel so much better. You can get there too!
