I’m a really big fan of all the recipes on this week’s meal plan. Admittedly, two of them are my very own. I generally put the most time consuming recipe of the bunch in the Sunday slot because Sundays are for lazing around the house, so you have the time to do something a little bit more impressive. Not that meatloaf is super impressive, but it does take about an hour to cook, which is a long time on a weeknight. The rest of the recipes come together really quickly, and I hope you enjoy them!

Sunday – Turkey Meatloaf with Parmesan Zucchini & Corn

Note: 1) You could easily substitute beef in this recipe if you wanted. 2) Instead of combining the ketchup, brown sugar and Worcestershire sauce for the top, you could substitute your favorite bbq sauce in a pinch.

Note: This recipe calls for Barramundi which is a sustainable white fish, but you can substitute any other white fish you like if you can’t find Barramundi.
Tuesday – Turmeric Lemon Grilled Chicken with Honey Maple Roasted Carrots

Note: 1) I like the sweet carrots with this chicken because the turmeric gives it a little bite on the pallet and the lemon is that tang, so the honey maple flavor on the carrots really balances everything out.
2) Ground turmeric is bright yellow and can be found in the spice aisle of any grocery store. 3) This carrot recipe uses crinkle cut carrots, but that doesn’t appeal to me at all, so I would just cut up whole carrots.
Wednesday – Slow Cooker Beef Barbacoa Taco Salad

Note: 1) Remember to halve the spice ingredients in the slow cooker since I cut the meat down to 1lb instead of the 2lbs the recipe calls for and the salsa ingredients in half, as well. If you want to make all 2lbs then you will have amazing leftovers to take to work with you! It’s delicious cold on salads.
Thursday – Chicken Broccoli Quinoa Casserole

Note: 1) This recipe calls for 1/4 cup of bacon, which is optional, but 1/4 cup is a very small amount. So, if you want to use it but don’t know what to do with the rest of the package, here’s a tutorial from The Kitchn on how to freeze bacon strips so you can thaw and cook a little at a time.
Friday – One Pot Ground Beef Stroganoff
