I am not vegan, not even close to it. I did no dairy for six months once, and I actually loved the way it made me feel, but the siren call of cheese wouldn’t let up and I eventually came back to the good life. These days I try to eat vegetarian as often as possible just because it’s healthier for you, but when it comes to this Vegan Caesar Dressing, it’s all for convenience sake.
Classic Caesar dressing has both anchovies and raw eggs in it. It’s not exactly hard to make, but it does take some special ingredients and there are those that, although they love Caesar salads, don’t want to handle anchovies. And raw eggs in food always freaks people out. So, don’t bother with that!
The base to a creamy vegan recipe is almost always going to be cashews. For some reason, cashews are the vegan go-to for a creamy texture. And a typical vegan recipe will definitely call for “soaked cashews” which will require you to soak raw cashews over night or for hours beforehand, which necessitates so much PLANNING.
I never do that. I use roasted cashews and, wait for it… I boil them! No kidding. Boil roasted cashews for 15 minutes to soften and hydrate them, and they work exactly like raw soaked cashews. Plus, I think it gives a much better, nuttier flavor to this dressing than the raw kind.
This vegan Caesar dressing is so yummy, my 18mo likes to eat it as a dip with vegetables. And why not? Everything in it is really good for you!
