Roasted vegetables are my jam. I can’t get enough. There’s not an event or a season or a time of day that they aren’t perfect for. I served roasted vegetables at my daughter’s 3rd birthday party. They cleaned me out! Something amazing happens to vegetables when you roast them in the oven. Even brussel sprouts and cauliflower are delicious roasted!
This one pan meal just came to me one evening when I did not want to make dinner, but I already had a bunch of ingredients on hand. I thought to myself, why don’t I just throw it all into the oven together and be done with it? So I did. And, you know what? I’m so so glad.

You can use any type of sausage you like, but if you are going to use pre-cooked sausage, you’ll want to throw it in there just for the last 15 minutes so it heats through and doesn’t dry out.
