Raw Kale Pesto Pasta is a fresh and healthy dinner that comes together very quickly. It is delicious and will satisfy everyone in your house. Skip that oven tonight, and make a good for you dinner in a flash!
First off, I would like to explain. This is not a pesto, even though I could just call it that and get away with it. It’s a pistou.
What is a pistou?
Basically, the difference between a pesto and a pistou is that a pistou does not contain pine nuts. Pretty much the only thing that qualifies as an actual, classic pesto is a sauce that contains basil, pine nuts, garlic, olive oil and Pecorino. Without pine nuts that same sauce is a pistou. Any other pesto-like sauce made with other ingredients that does not contain pine nuts is a pistou, as well. I debated just calling it a pesto and leaving it at that, but I thought that I would be technical about it in the hopes that some of you would enjoy the small education on pesto vs. pistou. Pistou. Say it out loud. It makes you feel fancy.
I love kale. I like it in soups, braised, or sautéed with some garlic and olive oil. I even add it to my cauliflower gratin, but my favorite way to eat kale is raw. I know what you’re thinking – no one really likes the taste of raw kale. It’s the healthy gimmick green that goes into smoothies, right? Wrong! Kale does have a very distinct, strong flavor that many people don’t go for, but that flavor is so versatile that there are hundreds of ways to tailor it to fit your individual tastes, and the flavor changes depending on how you cook it. If you think you don’t like kale, don’t give up on it quite yet. You probably just haven’t had it prepared the right way.
Raw Kale Pesto or pistou is an easy favorite in our house. I mean, who doesn’t like an easy weeknight dinner recipe? It’s always a little bit sweet and luxurious tasting, and it is extremely simple to make. This one would be perfect to make vegan by simply leaving out the cheese. In fact, I normally don’t make it with cheese, but I had some Parmesan left over from another night, so I threw it in.
Raw Kale Pesto tastes extremely fresh and is so full of flavor that you won’t believe how good it is for you. I always put it on whole wheat pasta because I like that extra element of “good for you” in there, but you can use any pasta that you prefer. This pesto comes together in less time than it takes to boil the pasta, so this is really one of the ultimate healthy, quick dinners. I’m sending the leftovers with my husband for lunch this week, and he’s thrilled.
Raw Kale Pesto Pasta is so easy you could let your kids help you with this one. My daughter has recently shown a huge interest in helping with dinner. It’s hard for me because, as I discussed in my last post, I’m a control freak in the kitchen. But I am also jumping for joy at her interest and for an easy way for us to do something interesting together, so I suck it up and cook with her. And I love it. Get your kids in the kitchen! Even if it’s hard for you to do, just breath and relish this time together. They’ll remember it forever.
