Man, it’s been a long couple of months since I last posted. Life ran away with me, and stress weighed me down, and something had to give. Unfortunately, this was the one place I could give a little slack without my daily life falling around my shoulders. It was good, though. We all need a little break sometimes, even from things we enjoy doing, and now I feel ready to jump back in. So, I give you this yummy, healthy and easy lunch recipe!
Lunch is the easiest meal of the day for me. Throw a salad in a bowl. Done. And I really, genuinely love salad, so I’m usually very happy with that as my lunch. But every so often I want something new, but something that will still fuel me for the rest of the day and not weigh me down with guilt for having eaten it. This olive oil tuna salad with sun dried tomatoes and almonds was the perfect thing.
This would be the perfect make a head lunch to take to the office, too. Bring along the olive oil tuna salad in a container, throw some lettuce leaves in a plastic baggy, and put it together right before you eat. Guilt free and full of flavor. That’s how I like to eat!
