The first year Alex and I were married I made a little bet with myself. I bet that I could make something new for dinner every time I cooked for a whole year. I could make as many, say, Chili’s as I wanted, but I couldn’t make the same one twice. Since I never like to follow a recipe anyway and I love making all different kinds of food, this sounded like an excellent idea to me and a wonderful adventure. I don’t remember everything I made (I should have kept a journal!) but I do know that I won. I made something different every time I cooked for an entire year, and it was great! But, that was the first year of marriage. We were young(er) and on our own and had all the time in the world for things like extravagant dinners at 9pm because it took me 2+ hours to make a Spanakopita Pie – which was totally worth it, by the way.
Now, though, life looks a little bit different. We have two little kids who need to eat before they go to bed. We somehow now have 20 things that need to be done between the kids’ bedtimes and our bedtimes, and honestly, I am so tired at the end of most days that creativity is pushed to the back of my brain and what I reach for is a tried and true recipe of something healthy, easy, and delicious that I know everyone will eat.
These two grilled chicken marinades are a couple of my standbys, and that is saying something since I still don’t like to make the exact same thing a lot. They are each so full of flavor that sings on your taste buds and makes you feel like you just indulged in a special treat meal. And you won’t believe how easy they are to throw together. The secret is in the time you let the chicken marinade. I try to put my marinade together with the chicken to sit in the fridge around lunchtime so that it can soak up all the delicious flavors for at least six hours. You could do it before you head to work in the morning. However, you will still have scrumptious chicken even if you only have 30 minutes to let it sit.
These marinades are perfect for roasted chicken on the bone, too. Use them on steak or even fish! You won’t be disappointed no matter what you do.
