Sometimes I ruin Sundays for myself on Saturday. Since Sunday is the last day of the weekend, I want to make the most of it. I want to make it to church on time with everyone looking fantastic, do fun family stuff together, work on a blog post since Alex is home to help with the kids, and I also want to make it as relaxing and restful as possible. Very often, this is too much to ask of one day and when one of the things on my “perfect day” list is left undone or not done like I was hoping, I am disappointed. I find that one of the easiest ways to make Sunday run smoothly is to plan simple meals ahead of time. This shredded BBQ chicken sandwich is what I made for lunch this past Sunday, and it was the perfect quick and satisfying lunch because the chicken cooked in the slow cooker while we were at church! And since there are only two ingredients for the chicken, it takes no time at all to throw in the slow cooker.
I whipped up an herb goat cheese spread for the rolls which took the shredded BBQ chicken to the next level. Fresh chives and cilantro are natural flavor matches with a sweet and smoky BBQ sauce, and the tangy goat cheese gives it an extra little kick that turns what could be a boring sandwich into a fancy feeling weekend lunch.
